Cereals containing gluten

The following crops are included: wheat, rye, barley, oats, spelt, kamut or their hybridised strains.

Crustaceans

The term “crustaceans” includes all species of crustaceans. For example: lobster, crab, prawns and langoustine.

Fish

The term “fish” includes fish from all species of fish and fish products. Use of the common species names (eg cod, mackerel) should be sufficient to indicate the ‘fish’ content of a product, but where terms or names are used that are not commonly known to be fish products the word “fish” should be used.

Eggs

The rules do not specify any species of eggs, but “eggs” refer to eggs from laying hens as well as eggs from other birds, eg broiler chicken, duck, turkey, quail, goose, gull, and guinea fowl.

Peanuts

Can commonly be called groundnuts or monkey nuts, but the term ‘peanuts’ should be used for allergen labeling purposes.

Soybeans

The terms ‘soya’ or ‘soy’ would be sufficient to indicate the soybean origin.

Milk

The origin of the milk is not defined but includes all species. Therefore, includes not only cows’ milk, but also milk from sheep, goats and buffaloes etc. The rules require that care should be taken to ensure that unfamiliar dairy products used as ingredients (eg fromage frais, Mascopone, Cantal, quark) are clearly labeled by reference to milk. The presence of the milk sugar lactose also needs to be indicated as ‘milk sugar’ or with some other reference to milk.

Nuts

Includes: almond, hazelnut, walnut, cashew, pecan nut, Brazil nut,
pistachio nut, macadamia nut and Queensland nut.

Celery

This term refers both to celery (stick celery) and celeriac (root celery).

Mustard

This refers to the mustard plant and other forms which originate from it, such as leaves, sprouted seeds, mustard flour, table mustard and mustard oils. The rules require that the appropriate terms should be used in labeling.

Sesame Seed

Refers to the seeds of sesame, but also products deriving from it such as tahini and sesame oil.

Sulphur dioxide & sulphites

Required to be declared at levels above 10mg/kg.
This additive should be declared by reference to the term ‘sulphur dioxide’ or ‘sulphite’ depending on the chemical nature. Furthermore, depending on the particular sulphite present, the chemical namemay be used, for example - sodium metabisulphite.
